15 Minute FarmShare Fun

So, the sun is finally shining and it's supposed to be a beautiful weekend. You just picked up your FarmShare bag and you're not sure you want to spend a lot of time in the kitchen. What to do?


Well, here are a few ideas for quick, delicious dishes for your FarmShare veggies that can be made in about fifteen minutes or less.


Ready, set, go!


Heirloom Tomatoes
We think they're tastiest eaten fresh. So, why not make a quick Bruschetta? Chop up the tomatoes. Toss them with a little olive oil, sea salt, freshly ground black pepper and a few minced herbs -- this week's chives, thyme and sage would do nicely. Heap onto slices of toasted bread.


Broccoli
Cut broccoli into florets. Steam or boil until just tender. While broccoli is steaming, take a large bowl and mix together 1 tbsp olive oil or sesame oil, the juice of half a lemon, a drizzle of honey, salt and pepper.  When broccoli is done, add to bowl and toss.


Mashed Cauliflower 
Trim 1 head of cauliflower into small florets; put into pot; cover with water; bring to a boil and cook until cauliflower is tender and drain. While still hot, puree cauliflower with 2 tbsp butter with immersion blender or in food processor. Serve as a low-carb alternative to mashed potatoes.


Potatoes
Nice weather is perfect for potato salad. Cut boiled potatoes into 1-2" cubes and add to mixing bowl. Add diced baby celery and leaves along with minced chives. Make a simple vinaigrette by whisking together 3-4 tbsp olive oil, 2-3 tbsp vinegar or lemon juice, 1 tbsp mustard, and salt and pepper to taste.


Apples
Just eat 'em for goodness sake!  This week's Honeycrisps are tart, crispy, juicy, and delicious. We think they taste best on an autumn day just like today.
