Candied Cherry Tomatoes

It's tomato time at FarmShare this week. 

Green Zebra, Mortgage Lifter, Aunt Ruby German Green, Tigerella, Green Giant, Pruden's Purple, Limmony, Virginia Sweets, Black Zebra, Snow White, Black Cherry... names as colorful as these tomatoes are flavorful.

We're enjoying a bounty of at least a dozen different heirloom tomato varieties from Breezy Hill Farm as well as jewel-like, cherry tomatoes from Art Farm and Infinite Garden Farm.

As if they weren't delicious and sweet enough already, one of our favorite ways to enjoy cherry tomatoes is to roast them in a slow oven until they're sweet and gooey like candy. Cherry tomato candy makes a tasty mix-in for pasta or a wonderful spread for sandwiches or on toasted bread or crackers.

Candied Cherry Tomatoes 


1 basket cherry tomatoes, tops removed 
1 tbsp olive oil 
1 tbsp balsamic vinegar 
Coarse sea salt to taste


Preheat oven to 300° F. 


Toss the tomatoes with the olive oil and vinegar and sprinkle with salt. 


Spread out on parchment-covered baking sheet and roast for 2-3 hours or until tomatoes are caramelized and sticky. 


Toss with your favorite pasta or use as a spread on bread or crackers.
