Braised Lettuce & Peas
1 tsp oil, butter or bacon fat
1 small onion, finely chopped
Leaves from 1/2 head of lettuce
Salt
1/4 cup peas (optional)
Heat the oil, butter or fat over medium-low heat in a large skillet.
Add the onion and sauté, stirring occasionally, until translucent.
Add lettuce, sprinkle with salt.
Add enough water to come halfway up the sides of pan. Bring to a boil over high heat; reduce heat, cover pan and simmer 15 minutes.
If using peas, add them during the last 2 minutes. Remove lettuce from the liquid with slotted spoon or tongs.
Turn the heat to high and boil the liquid, uncovered, until reduced to a sauce-like consistency. Turn off heat; return lettuce to pan and toss with sauce.
Add salt if necessary, and serve warm.
